Influencer Desarae (@cooking_comedy_chaos) shares videos about food, cooking, and her life with her 546,000 TikTok followers.

In a recent clip, she shared a turkey-cooking technique she says is “essential everyone knows.”

Desarae said: “This method delivers a more even, juicy, and flavorful turkey than any other method of cooking.”

The method in question is spatchcocking, which means removing the backbone and pressing the bird flat so it cooks faster and more evenly.

The video opened with the influencer preparing a whole, uncooked chicken – and she’s careful to specify that the technique will also work well for turkey.

She said: “If you’ve never worked with a whole chicken before, don’t be nervous – you have to start somewhere.”

She then identified the chicken’s backbone and began to cut it out using scissors, snipping along each side of the bone before removing it.

The home cook said: “Once that bone is out, the chicken can almost lay flat.”

After flipping the bird over so the breast is uppermost, the next step was to break each of the breastbones.

Desarae said: “Just push down hard until it snaps and the chicken lays flat – and then it’s spatchcocked.”

After drying the chicken with paper towels, the influencer seasoned it with salt, pepper, mayonnaise, and a dry spice rub mix.

She cooked her chicken in a smoker, but stressed that you can cook yours however you like it.

She said: “Let it rest for at least 20 minutes afterward to make sure it’s juicy.”
